vegan veggie cream cheese spread










This is delicious and hearty.  The added veggies give the spread a refreshing taste.  Great spread for tea sandwiches.


Cream Cheese

  • 1 1/2 cup raw cashews 
  • 1/2 cup water
  • juice of two lemons (can add peel too)
  • 1/2 tsp salt
  • 1 tsp apple cider vinegar

Vegetables

  • 1/4 cup chopped green onions
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 small red pepper, chopped
  • 1 tbsp dry lemon dill


Soak cashews in hot water 5-10 minutes or for 5 hours or overnight in water.   Drain before use.

Place soaked and drained cashews, water, lemon juice, salt and vinegar in a blender and mix till creamy.

Add the vegetables and blend.
