Vegan Mushroom Walnut Meatballs








This is a simple dish to prepare.  It takes only five ingredients to make the meatballs.  The resulting product is incredibly delicious even my carnivore husband loved it.  I based the recipe on the one I saw on the show Jazzy Vegetarian.

Instead of baking the meatballs in the oven, I used my air fryer and they came out crispy on the outside and still soft but not mushy in the inside.  When I ate several bowls, I like to add a little bit of nutritional yeast, garlic powder and oregano on top but they are not necessary.


Vegan Mushroom Walnut Meatballs

Based on the recipe from Jazzy Vegetarian

Ingredients

  • 1 1/2 cups whole grain bread crumbs, (I used 4 thin sliced whole grain Seedtastic Bread)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 2 cups sliced mushrooms
  • 1/2 cup diced onion


Instructions

Preheat the oven to 350 degrees Fahrenheit if baking in the oven or air fryer.

Place the bread in a blender and process into crumbs.  Transfer the crumbs in a bowl and add the Italian seasoning, garlic powder, and salt.  

Put the walnuts in a blender and process into coarse crumbs.  Add the walnuts to the bread crumb mixture and mix well.

Put the mushrooms and onion in the blender and process into chunky mixture.  Add this mixture into the walnut bread crumb mixture in the bowl.

Scoop out about 1 1/2 tablespoon of the mixture and place in the air fryer pan that has been sprayed with nonstick food spray.  Makes 20 small meatballs.  About four servings.

Bake at  350 degrees Fahrenheit for 20 minutes in the air fryer.  You can also bake in the preheated oven for 25 minutes or until crispy.

Serve with store bought pasta sauce over cooked spaghetti.

I like to add more garlic powder, some nutritional yeast and oregano on top of the dish.
