Three Ingredient Chocolate Mini Cupcakes with Chocolate Vegan Icing

 





This easy recipe is excellent to satisfy your chocolate craving.  All in all five ingredients are needed for the frosted cupcake.   The banana and cocoa are both used for the cupcake and icing.  If watching calories, make mini cupcakes rather than regular ones. That was what I chose to do. 

Frosting is made of tofu. Yes. No nuts involved here or non dairy either nor oil. I gave it more body by adding banana. 

The frosting gives velvety sensation in your mouth. The cupcake can stand alone without it if you prefer. Enjoy. I gave the calories for both frosted and unfrosted versions. I used non calorie sweetener for icing. 


Three Ingredient Chocolate Mini Cupcakes


  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 3 tbsp cocoa 


Preheat oven to 350 F.

Add all the ingredients in a bowl and mix with a fork. 

Line mini cupcake pan with paper liner. Fill the pan 2/3 full with batter. You can get up to 12 to 18 mini cupcakes. 

Bake for 15 min at 350 F.

Chocolate Vegan Icing

  • 12- 14 oz silken tofu (just drain but no need to press)
  • 2 tbsp cocoa
  • 4 tbsp sweetener or to taste (I used erythritol)
  • 1/2 banana 


Mix all the ingredients in a food processor.
