VitaMix Vegan Mozzarella Cheese













Yes, you can make mozzarella cheese, even vegan at that, right in your VitaMix blender. It is stretchy and gooey as well as delicious.  This was adapted from the wonderful vegan blog Nora Cooks.  Instead of cooking or thickening the cashew mixture on the stove, I just used the same VitaMix blender where all the ingredients were blended.  The blender has to be one that heats up at high setting.

I used it to make Naan Pizza in the air fryer and as a spread over toasted bread.  Yum.

VitaMix Vegan Mozzarella Cheese

Adapted from Nora Cooks

  • 1/2 cup cashews (note 1)
  • 1 1/3 cups water
  • 1 tbsp lemon juice from 1/2 a lemon
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 4 tbsp tapioca starch (note 2)

Place all the ingredients in the VitaMix blender and blend at the highest setting.  Continue blending until the sides of the blender gets warm and the mixture gets thick.  Around five minutes.   Take out of the blender and place immediately in a container.  Enjoy!


Note 1:  The original recipe suggests raw cashews and also that they be soaked in water.  I just used cashews unsalted not raw and did not soak them either.
Note 2.  Tapioca starch makes it stretchy.  I have used cornstarch which makes the cheese thick but not stretchy.
