Slow Cooker Korean Pork Rib Taco




This is an easy slow cooker Korean Pork Rib Taco.  You cook the meat in the slow cooker with Korean Bulgogi Beef Marinade from the Asian store and flavor it with any cola drink you like which in my case is root beer.  Use this meat for your taco for example this Super Bowl Sunday and top it with beets, feta cheese and cilantro for a change or you can always use your favorite coleslaw recipe.  Enjoy!

Slow Cooker Korean Pork Rib Taco

  • 3 lb pork country rib, bone in or boneless
  • 1 cup Korean Bulgogi Beef Marinade
  • 1 cup root beer
  • 1 tbsp cornstarch mixed in 2 tbsp water
  • small corn or flour soft tortillas
  • 1 can beets, drained and cubed
  • cilantro
  • feta cheese
Place the first four ingredients in the slow cooker.  Cook for 3 hours at high setting or 6 hours at low setting. I cooked mine in an Aroma Brand rice cooker/slow cooker for 3 hours at slow cooker setting. Pull the ribs apart with couple of fork or chop it.

Assembly

Place the pulled ribs on top of the corn tortilla.  Add a bit of the sauce.  Top with beets, feta cheese and cilantro.
