Coconut Mango Paletas

Drive away winter blues with a popsicle or paleta. This is awesome. Be happy. Make it. Bring summer in now.  

Coconut Mango Paletas

  • 1 cup canned coconut milk, full fat
  • 1 cup mango pulp from the Asian store
  • 1 tbsp vanilla extract
  • 3 tbsp maple syrup
  • 1/4 tsp salt
  • 4 tbsp sweetened coconut flakes
Mix all the ingredients in a blender. Pour into popsicle molds.  Freeze for six hours.
